Apple Cart Cider is the 2nd vintage release by Rusty Bike Wines. Table cider is a small category of the market but it is one of my favorites. The idea is that a large bottle of cider with higher alcohol and deep flavours is designed to be shared over a meal. So does the apple cart fit the bill?
There are many ways to make cider. I want to talk about the champagne method or as you may have heard me call it Methode Traditionelle Cider. But this French sounding technique was actually pioneered in England and what happened next changed the beverage world forever.

Hailing from the Blue Mountains in NSW, this bottle condition cider is far more posh frocks at Royal Randwick than blue denim at NASCAR.
